Today I made "my" Harvest Grains Bread and baked it in the Emile Henry long baker. It came out well and I will slice it tomorrow. Will try to remember to post a photo tomorrow too. The file is too big to post from my iPad.

July 8, 2025 at 6:28 pm #46723On Tuesday, I baked three loaves of Whole Wheat Oat Bran Bread. Two will be frozen, and we will begin slicing the third one tomorrow at lunch. We are currently having cooler weather, so baking does not overheat the house.
July 9, 2025 at 8:23 pm #46727I want to get back to trying new recipes, and on Wednesday, I pulled out one that I had on my list, "Rory's Irish Scones," in The Baking Sheet, Vol. XII, no. 2 (Early Spring 2011). Amy MacDonald Persons sent them the recipe, which she got from Simon Pearce's A Way of Living. These are simple, butter-less scones that use buttermilk and come together fast. I made a half recipe and whipped them up quickly for breakfast. Although the recipe says that it makes 54 scones for a full one, those must be exceptionally small scones. I had hoped to make 27, but I ended up with 14, and those were small. I used the option of making them with half whole wheat flour. I will definitely bake these again--a full recipe next time--especially as it gives Scott something on which to put jam when having tea, thus taking the pressure off of the regular loaves of bread.
After breakfast, I baked Maple Granola, as we were completely out of it.
July 10, 2025 at 9:09 am #46728More Bao. Dad is willing to eat these so I guess I will be cooking them for awhile. Steaming seems more forgiving as there is little to no risk of over cooking, and it seems to heat the kitchen less than baking. It takes two batches in the steamer for 20 minutes -- 10 minutes actively steaming and 10 minutes resting in the hot steamer. So 40 minutes for two. Which is comparable to preheating the oven for 15 minutes and baking for another 15.
This bao turned out well and I cooked it before it over rose so it expanded in the steamer. I am basically using KAF Taiwanese Bao but will a little extra water to dissolve the yeast, and more flour to compensate. Also a little more baking powder 1/2 tsp, and salt 1/2 tsp. This time I shaped it into small rolls and cooked it that way.July 10, 2025 at 6:05 pm #46729I baked oatmeal and raisin cookies for the poker β₯οΈ game tomorrow night. I plump the raisins with orange liqueur in the microwave for 30 seconds and it makes them soft and good.

We went blueberry picking on Friday, which meant leaving here around 7:30 a.m., so I had a very light breakfast of granola with milk. When we came home, I decided that brunch was in order for me, so I made Cornmeal pancakes to go with my coffee. Annie is also fond of cornmeal pancakes, although she prefers waffles.
In the afternoon, I made Rye Blueberry Chia Jam Bars for dessert tonight, using the blueberry chia jam that I made yesterday. I adapted the recipe to use avocado oil instead of butter to reduce saturated fat. I realized that it is another accidentally vegan recipe in my baking repertoire, so I'm ready if any vegan family members visit.
I'm not impressed with the commercial frozen blueberries I used. They seem rather bland compared to the ones we pick.
