We had a stir fry for dinner tonight.
I made pizza and chicken veg soup.
We had tomato and salami sandwiches and a salad (with more tomatoes).
Last night I made the chicken with orzo, spinach and goat cheese and had leftovers tonight and for the next couple of nights. I enjoy it, but it's definitely one of the dishes that one doesn't make too often.
My neighbor brought me BBQ pulled pork and smoked ribs yesterday so I had a BBQ sandwich and chips with baked beans.
I made chicken veg soup and had it with leftover pizza.
We had tacos, using up more of the hydroponic tomatoes. Kinda fun to have fresh flavorful tomatoes in April.
I had a baked ham sandwich and baked sweet potato.
Sunday dinner was Progresso canned chicken and rice soup. I keep it around for when we travel, but it is also good when the electricity goes out. I heated it in a pan on the wood stove.
Monday night dinner was leftover stir-fry.
Tuesday night dinner was the rest of the stir-fry for my husband and a slice of my spaghetti squash quiche, which I also had for lunch, for me.
Tonight I had steak and a wedge salad.
We had a ham steak with pineapple for supper, plus salad.
I had a ham and cheese sandwich with chips.
I had an open-faced turkey sandwich with goat cheese instead of mayo, some mango chutney, spinach and then some Gouda melted on top - more cheese than turkey - on some of Will's sourdough. I have to bake some kind of whole grain bread on Sunday - I haven't figured out which recipe yet
Wednesday night's dinner was salmon patties and roasted potato chunks with microwaved frozen peas. I wanted something quick, as there was talk of severe weather, which turned out to be the case. Fortunately, I had the food stowed away when we lost the electricity again at 7:45 p.m. See Member News, Part II for details.
Thursday night's dinner was cold salmon patties and potatoes for my husband and a cold salmon patty and the last slice of cold spaghetti quiche for me.
