Pizza Sauce

INSTRUCTIONS
1/4 c olive oil
1 large onion, chopped
6 cloves garlic, minced
2 cans (28 ounces each), Italian plum tomatoes with juice
1 can (14-1/2 oz) whole tomatoes, with juice
5 TB tomato paste
3/4 c dry red wine
1/4 c dried Italian herb blend
salt and pepper to taste
Heat the oil in a large sauce pan over medium-high heat and add onio and garlic and cook, stirring frequently, for 10 minutes. Stir in the canned tomatoes, tomato paste, and red wine. Season the sauce with the Italian herbs, salt and pepper. Simmer uncovered over medium heat, stirring occasionally with a large spoon to break up the tomatoes, for about 45 minutes.
Makes 2 quarts.
