Dinner tonight was baked haddock, corn-bean salad, leftover roasted veggies, and cole slaw.

January 26, 2025 at 10:48 pm #45338I made a big pot of soup for Sunday dinner using most of the turkey broth that I made late last week. I used 12 cups of broth, two cups of Bob's Red Mill Vegi-Soup mix of lentils, split peas and barley, chopped carrots, chopped celery, chopped yellow bell pepper, 8 oz. sliced mushrooms, 1 heaping tablespoon dehydrated onion, and an heaping tablespoon of Penzey' Bouquet Garni seasoning. I plan to freeze some of the soup. We had it with cornbread muffins.
January 27, 2025 at 6:24 am #45340I had a big surprise my son has came for a weeks visit!I wasn't prepared so we had leftover chili and a grilled cheese sandwich.He was happy and so was I.

January 27, 2025 at 10:23 am #45343Last night I had leftover turkey breast. I made gravy from the pan drippings that I had saved, made mashed potatoes by first baking them until tender, then mashing them with some milk and a little butter, broccoli and cranberry sauce.
I have enough of everything left for tonight's dinner, will only need to make a vegetable.
January 27, 2025 at 2:45 pm #45344Crab cakes (with lots of lump crab) were on sale and since they required little prep I purchased them for dinner last evening. I served them with broccoli slaw and some french fries. I don't think our house will ever find peace. We hired the worst contractor in hopes of getting everything done quickly. Big Mistake!

My son cooked us steak with baked potato, mushrooms in wine and I made some green beans yummy and I'm full!We are having a great time!
January 27, 2025 at 6:45 pm #45347Last night Will made beef stew from Ina's Comfort Food. We had leftovers tonight and again tomorrow before he leaves for Chicago on Wednesday. It was what he wanted before he left and there will be enough for me to freeze. He's finally moving - the date has been on and off for several months, but everything is in place now. I'm going to miss him, but I'm so glad he's getting a chance to move on with his life.
I'll be cooking more now π

January 28, 2025 at 4:29 pm #45352I am making a big pot (10 quarts or so) of vegetable beef soup today. We'll eat it for several days and freeze a bunch of it, too.
