      DESCRIPTION
      Oatmeal Sandwich Bread

      SUMMARY
      Yield 0 File under Yeast Bread/Rolls (not sourdough)

      INSTRUCTIONS
      I have been working on a fairly light Oatmeal Sandwich Bread using my Zoe in the dough setting and a Pullman pan.

      1 1/2 oz Rolled Oats
      2 1/2 oz Steel cut oats
      1 1/2 oz Brown sugar
      1 1/2 oz Butter
      1/2 Tbl Salt
      1 1/2 oz Dried Milk
      14 oz Water
      4 oz Oat flour
      12 oz All-purpose flour
      1 Tbl Yeast
      2 Tbl Dough Helper

      1 Heat Water to boil.

      2 Combine Rolled Oats***, Steel cut oats, Brown sugar, Butter,
      Salt, Dried Milk, and stir water into mix.

      3 After one hour (which lets the Steel cut oats rehydrate) add
      Flours, Yeast, and Dough Helper.

      4 Run bread machine on "Dough" setting.

      5 Transfer to crock and let "double" a second time
      -- about 30 min.

      6 Pre-heat oven to 375*.

      7 Fold Down, Shape, and place in Pullman pan. Nearly close
      lid, leaving an inch, or so, open to check on rising,
      and covering opening with plastic wrap.

      8 Let rise to within 3/4 inch of lid -- about 30 min.

      9 Close lid, place in oven and reduce setting to 350*.

      10 Bake for 40 min.

      11 Remove lid and bake for 10 min, or until 190*.

      *** If using quick cooking Rolled Oats, add at the same
      time as the flour (step 3 rather than step 1).
