      INSTRUCTIONS
      Cooks illustrated yellow cake ( another one)

      1 c butter
      ½ cup milk
      4 lg. Eggs
      2 tsp. vanilla
      2-1/4 cups cake flour
      1-1/2 c sugar
      2 tsp. baking powder
      ¾ tsp. salt

      this cake uses the two-stage method of which I am a huge fan. It makes so tender cakes!

      Heat oven to 350° and prepare two 9” pans, line bottom w/ greased parchment.

      Put flour, sugar, baking powder and salt in mixer bowl, beat 30 sec. On low speed. Meanwhile combine milk and eggs, measure out one cup. Add butter in small pieces to flour mix, mixer running on low , once all the butter is added the mix should look sandy and pebbly with pea sized bits of butter. Add reserved one cup egg mix and mix in on low speed until incorporated. Increase speed to medium high and beat about 1 minute until mixture is light. Add remaining egg mix in slow stream, about 30 sec. Stop mixer and scrape the bowl. Beat about 15 sec. Longer, mix will look slightly curdled, that’s fine. Divide between pans and bake for about 20-25 min. cool on racks for 10 minutes, then invert and remove paper, turn right side up and cool completely.
