INSTRUCTIONS
Bishop's Chicken Salad
4 chicken breast halves - roasted gives a better flavor than poached.
2 green onions chopped - I have subbed chives
2 ribs celery chopped
1 cup green or red seedless grapes, halved - I like them quartered
1 cup chopped pecans
1 tsp poppyseed
1/2 tsp garlic salt
2 tsp sweet relish
1 cup Hellman's mayonnaise - use the full fat version for the best flavor
Cut up chicken into small bite size pieces. Combine all ingredients, stir in mayo. Chill. Serve on lettuce leaves or with croissants. 4-6 servings
