I got carried away at the farmers' market and bought a cute little eggplant (6.7 oz.). I've never cooked nor eaten eggplant, so I don't know what possessed me.
Suggestions on what to do with it would be appreciated. Most recipes seem to be for large ones. Perhaps I could roast it and use it somehow?
Mostly what I do with smaller eggplant is pair them with similar sized summer squash and zucchini and make ratatouille.
I rarely grow eggplant, because my husband doesn't like it. I usually make ratatouille, also. Sometimes I've grilled it -- slice it lengthwise, about 1/2 inch thick and brush lightly with oil, and I sometimes sprinkle with a Penzey's seasoning. Careful -- it does absorb a lot of oil.

I like to peel it and cut it like french fries flour and deep fry.
