I've been searching the net and can't find a really good picture of the royal wedding cake, it doesn't appear to have a lot of color and it tends to blend into the background.

It is not an easy cake to photograph. I also think that those holders detract from the cake--at least at the angle of the example you posted.
I think it's a combination of a lack of contrast between the cake and the background and that ornate holder.
I found a video of one of the cakes being frosted and the baker discussing it (if you can hear it over the music that's been added).
The pictures we've been looking at do not do justice to the scale of the cake.
