I made chicken broth on Wednesday from four bags of chicken bones that I had in the freezer. I then used some of it to make a kind of minestrone. Scott wants some meat in soup, so I added some cooked ground turkey. He also does not like basil, so I put some fresh basil on my serving. I used some autumn-themed pasta which had leaves and pumpkins. The soup made good use of some green beans that got too fat on the vine. I also used two of our large tomatoes. The other vegetables were carrots, celery, red bell pepper, sliced mushrooms, garlic, and green and gold zucchini.
I will add a picture later.
September 24, 2025 at 7:07 pm #47396I had chicken salad, the rest of the zucchini and an English muffin. It was hot today - fall has yet to arrive on the coast of Georgia
September 24, 2025 at 7:46 pm #47397I had the leftover steak with mushrooms and onions.
September 24, 2025 at 8:09 pm #47398I had 8 ounces of sirloin steak to use up, so I made a beef stroganoff and we had that on toast.
September 25, 2025 at 9:13 am #47400I made a stir fry with beef tenderloin strips from a piece I cut into steaks. I added some leftover marinated chicken , shallots , roasted corn and frozen green beans. I added some sauce I had in the refrigerator and it was pretty good. However frozen green beans are now on my "do not buy again" list.
September 25, 2025 at 3:04 pm #47401Hamburger steak, baked potato and a salad.
September 25, 2025 at 4:41 pm #47402I'm probably having a burger on the grill, I've got 1/3 pound of ground beef that needs to be used up. Diane's picking up a sandwich after her chiropractor appointment, since she goes right past her favorite sandwich shop on the way home.
September 25, 2025 at 10:29 pm #47404We had leftover soup with freshly baked cornbread.
Navlys--I agree with you about frozen green beans. Even though I have tried freezing some of ours, the freezing process changes them too much. I tolerate them in mixed vegetables or pot pie, but that is it.
September 25, 2025 at 11:16 pm #47405Flash frozen green beans are OK in soups, but not great in other dishes.
September 26, 2025 at 3:10 pm #47406I agree no frozen green beans for me. Today I just had a ham and tomato sandwich, poker night snacks tonight.
September 26, 2025 at 7:11 pm #47411We had soup and cornbread again. That was fine with me, as I tackled two major baking projects.
September 26, 2025 at 7:49 pm #47412After work, I went to Harris teeter to pick up something frozen - they had 4 Stouffers for $10 so I now have a small stash in my freezer.
The reason for this is that I went to my foot doctor today as my right foot was very sore and I was having trouble walking. I'm also supposed to leave for Chicago on Thursday - I hope this storm is gone by then. Turns out I have a stress fracture - so I have this lovely designer (not) shoe to wear for at least the next two weeks. My doctor said it would help with getting through the airport and such and I must say it does keep my foot from hurting too much.
So for dinner I had stouffer's Mac and cheese with frozen peas - lots of carbs but definitely comfort food
September 26, 2025 at 10:05 pm #47414Diane had dinner out with her sister, step-sister and niece tonight, so I had a bowl of potato soup and a salad.
September 27, 2025 at 8:46 am #47415Cvcdesign--Sorry to hear about the stress fracture. I'm glad you had it checked out instead of trying to tough it out. Re: the lovely boot and shoes in general. One thing about growing older is that "cute" shoes are no longer an option; sturdiness and support are needed. A company that can make such shoes and make them cute would make a fortune.
September 27, 2025 at 1:27 pm #47416I had shrimp scampi and a salad tonight.
Cwcdesign wishing healing comfort and hoping you have a great time in Chicago. -
