No cooking for me today.I went shopping with my friend... grocery shopping and we stopped by Subway on the way home and it was good for a change.
We split a T-bone steak with mushrooms and a salad.
Mike is correct: the dill is more pronounced after two days. I'm enjoying my pickles!
We had leftover roasted chicken breast and farro stir-fry for dinner on Wednesday.
I had the other half of my sub from yesterday.
I made yogurt on Thursday.
Dinner was more of the roasted chicken breast and the rest of the farro-vegetable stir-fry.
For dinner on Friday, I used the rest of the roasted chicken breast to make chicken salad. We had it on open-faced sandwiches, using slices of the Chewy Semolina Rye Bread I baked earlier in the week. I used dark rather than medium rye when I baked it, so it is a firm bread, which is perfect for this kind of open-faced sandwich. We had microwaved fresh broccoli on the side.
I made spaghetti squash 'lasagna' tonight. Should have used a bigger pan, I was running out of space but it needed more cheese and more tomato sauce. Was pretty good anyway.
Kinda soupy, not sure if that's the spaghetti squash, my home-made marinara, something else, or a combination of things.
I had rotisserie chicken and potato salad.
I had leftover Sloppy Joe's with some sourdough bread and butter.
On Thursday I was hungry when I came across a flyer for a nearby Italian restaurant, so I ordered a breaded chicken dinner (2 pieces of boneless breast, limp fries and slaw that wasn't worth the effort) and a cheese pizza. I had two dinners, one breakfast and one lunch from it.
Tonight will be rotisserie chicken from the freezer, a salad and either potato or pasta.
My husband managed to harvest another pound of green beans, and I used the rest of our cherry tomatoes as well as some I bought last week at the farmers market to make our favorite green bean, cherry tomato, and Greek cheese salad. I found a frozen container of black-eyed peas in the freezer, so I added those as well. We had it with open-faced chicken salad sandwiches.
We finished off the Veal Zurich tonight, and I had a salad too.
