I bought roasted chicken from the grocery store yesterday and made mashed potatoes and green beans.
Tonight will be leftover chicken and potato and sugar snap peas.
For Sunday dinner, I roasted salmon coated with pecan meal, Dijon mustard, maple syrup, and a bit of Panko. I also roasted potato chunks tossed in olive oil in the smaller oven. We had it with more of the green bean salad.
Today I had collards with cornbread and bacon with a slice of onion.
We had sandwiches on the new rolls. The hard rolls look a lot like the ones I had in NYC years ago, this is the first time I've made any that were just shaped as small hard rolls.
I warmed one up a little and had it with some Brummel & Brown margarine, it went well with the Beaujolais-Villages wine I'm drinking this evening.
The rolls I had in NYC so many years ago were on Beaujolais Nouveau Day, so this seemed like a good paring for tonight.
I made a chicken Caesar pasta salad - yum
For Monday night's dinner, I made pecan-coated boneless pork chops, and a stir-fry of brown and wild rice (cooked in the rice cooker in turkey broth from the freezer), with green onions, mushrooms, and yellow zucchini.
I had sloppy joes.
Today I had a salad with a hamburger patty.
I picked about 15 pounds of tomatoes today, plus ones from over the weekend, so I'll be starting a batch of tomato relish soon.
Some of the bigger tomatoes are finally getting ripe, so we had tuna fish salad in a tomato tonight.
We had the leftover pork chops and vegetable stir-fry for dinner on Tuesday.
I had hamburger steak with baked sweet potato and mushrooms with onions, ate half so it's leftovers for tomorrow night.
That is yummy, Joan! I like those meals that go another night.
Our dinner on Wednesday was the last two pork chops, the rest of the zucchini stir-fry, and a new stir-fry of brown and wild rice (from the earlier batch of rice) that I added to sauteed red bell pepper and green onion, then broccoli florets and a cup of chicken broth (Penzey's chicken base, as I did not have a small amount available). There is enough of the stir-fry to have with tomorrow's dinner.
Sandwiches on Banh Mi bread again tonight. That's really GOOD bread for sandwiches!
