String Bean and Cherry Tomato Salad

INSTRUCTIONS
String Bean and Cherry Tomato Salad

One pint grape or cherry tomatoes slice in half
1-1/12 # green beans (or mix with yellow if available)
1 med. Red onion, thinly sliced
1/4 c thinly slice fresh basil
5 TB extra-virgin olive oil
3 TB red wine vinegar
pinch or two of sugar

Cook beans until crisp-tender, about 5 minutes. Drain and rinse with cold water, drain well.

Combine beans, tomatoes and basil in serving bowl. Whisk oil, vinegar and sugar in small bowl to blend. Season dressing with s & p. Add dressing to vegetables, toss to coat. Cover; chill at least 1 hr. Serve cold or room temp.
