      No Shortening Pineapple Cake

      SUMMARY

      INSTRUCTIONS
      This cake has been a family favorite for years.

      2 Cups all purpose flour
      2 Cups granulated sugar
      2 eggs, lightly beaten with a fork
      1 teaspoon vanilla
      1 can crushed pineapple (20 ounce) with juice
      2 teaspoons baking soda
      1 Cup chopped walnuts

      Preheat oven to 350 degrees.
      Place all ingredients, including the pineapple juice in a bowl and mix until everything is incorporated. No mixer needed, just a wooden spoon is all you need. Pour batter into an ungreased 9 x 13 inch pan. Bake for 40 to 50 minutes. Cool and frost with cream cheese frosting.

      1 - 8 ounce package of cream cheese, softened
      4 ounces butter, softened
      1 1/2 cups confectioners sugar
      1 teaspoon vanilla

      Using a mixer, blend cream cheese until creamy. Add butter, confectioners sugar and vanilla; mix. Spread on cooled cake.

      Cake should be stored in the refrigerator.
