Here is a quick and easy soup which can easily be multiplied to feed more than one.

Artichoke Soup for One

1 1/4 cup (310 ml) chicken stock
1 scallion (spring onion), thinly sliced
1 tsp (5 ml) lemon juice
3 cooked artichoke hearts, fresh, frozen, or canned,
cut into bite-sized pieces (char-grilled are best)
Salt and freshly ground pepper to taste
2 Tbs (30 ml) heavy cream

Bring the stock, scallion, and lemon juice to a boil over high heat. Add the remaining ingredients and return to the boil, stirringoccasionally. Serves 1.
