      DESCRIPTION
      Alsace Apricots

      SUMMARY

      INSTRUCTIONS
      Alsace Apricots
      1 3/4 lbs ripe apricots
      1/2 cup water
      1 cup + 2 tbsp superfine sugar
      1/3 cup kirsch (cherry schnapps)

      Method: Stone and halve the apricots and arrage in the bottom of a flameproof dish, cut side up. Add the water,and sprinkle with about 2/3rds of the sugar. Cook over a gentle heat, stirring carefully from time to time. When the apricots are cooked (there should be very little syrup in the bottom of the dish)sprinkle on the remaining sugar. Pour the Kirsch round the apricots and grill to caramelise the surface. Transfer to warmed dish (or serve from cooking dish) and serve immediately.
