Still not much baking going on here.

It was a rainy day in the mid-70s here, so it was perfect for baking. I got up on Sunday morning and baked the Cinnamon Swirl Pumpkin Rolls that rose overnight in the refrigerator. I used puree that I made from a Fairy Tale pumpkin last year, which produced a deep orange puree that made a beautiful medium orange dough that tasted fantastic and baked well. I hope that I can find another Fairy Tale this year.

In the late afternoon, after getting sidetracked by Ancestry, and actually finding some information, I baked two loaves of Whole Wheat/Rye/Semolina bread.

Yesterday I made an Irish Chocolate Cake for a friend who helped me rip shelving out of my closet before I had a new closet system installed. He came back to install the small corner pieces of baseboard. It's one of his and his wife's favorite cakes.

I can't remember the last time I baked a cake, probably over a year ago and I sure made a mess of the mixer with the chocolate - I tried to stream it into the bowl while the mixer was running and I should have dumped it in all at once 🤣

Yesterday, I made our friend's Irish Brown bread which is a very quick one - it's still good, but the crust is a little dry. I made 2 mistakes - didn't allow the ingredients come to room temperature which made it harder to combine and I forgot to set the timer. I think I could have baked it a bit 5 minutes less. Lessons learned - don't rush it🤪

CWCdesign--if I had a nickel for every time I've forgotten to set the timer....

On Wednesday, I baked eight mini-loaves of Chocolate Zucchini Bread, using the King Arthur pan with wells for each loaf. I used grated yellow zucchini that I had left over from an earlier cooking project. I'll freeze four of these loaves for later. Half of one is a serving.

On Thursday afternoon, I baked a half recipe of my adapted Shipyard Galley Zucchini Muffins, so that I can have them for breakfast the next few days, and Scott can have one at teatime.

Yesterday I made small loaves of "herby" bread. I cut a lot of herbs from the planter on the deck, and snipped them up and kneaded them into the rising dough. It turned out very tasty, but next time I'll increase the amount of herbs. I thought I had at least doubled the amount from what I'd used in the past; but I guess not. Oh, well, it's a great excuse to make more bread tomorrow!!

The banana nut muffins were a success, the banana bread not so much. My wife didn't tell me not to add cinnamon, and it probably wasn't fully baked. It's edible, it's just not what she wanted.
