      INSTRUCTIONS
      Marzipan Plum Cake

      This is a wonderful cake. It takes a little effort to make but it makes a big batch and freezes well. You can use whatever fruit you like, we think plums, apricots and rhubarb go exceptionally well with the almond flavor of marzipan. It?s from a niederegger marzipan cookbook.

      Cake: 7 oz. butter
      ? c plus 2 tbsp. sugar
      4 eggs
      12 ? oz. flour
      2 tsp. baking powder
      3 oz. milk
      1 tsp. vanilla
      2 large cans of fruit

      topping: 10 oz. almond paste
      10 oz. heavy cream
      1-1/2 pckg. Cook-and-serve vanilla pudding
      3 lg. Eggs

      make up cake batter: cream butter and sugar, add eggs, stir in flour, baking powder and milk and vanilla. Spread into greased and floured jelly roll pan with sides.arrange fruit on batter.
      Make topping: beat egg yolks and almond paste until smooth, beat in cream and pudding powder. Fold in stiffly beaten egg whites. Pour over cake and spread evenly.
      Bake at 320? for 45 minutes.
