I made salmon patties for dinner on Sunday, which we had on the rolls I baked, along with a slice of the large, delicious Dester Indiana tomatoes. We also finished the last of the pasta-vegetable salad.
October 5, 2025 at 10:24 pm #47474I made a stir fry consisting of green beans, cauliflower, carrots and broccoli, smoked sausage and shrimp. Had it with rice. It was pretty good.
October 6, 2025 at 11:10 am #47475We wound up doing tuna melts last night, with a combination of Havarti and Swiss cheese. Yum.
October 6, 2025 at 9:22 pm #47477We had salmon patties on buns, with Dester Indiana tomato slices atop the patties. We also had microwaved fresh broccoli from the farmers market--the first of the fall season.
October 7, 2025 at 3:18 pm #47481I purchased some Rana butternut raviolis filled with caramelized onion. I cooked the raviolis per the directions and served them topped with Gazebo dressing and cubed leftover chicken. The raviolis have more squash than onion in them and you didn't need many to feel full. Now I have to figure out what to do with the rest of them since they were a Costco 2 pack. Note to self: don't buy something just because it's on sale!
October 7, 2025 at 3:57 pm #47482Last night I had leftovers of ribs, sausage and coleslaw, tonight I had a grilled cheese and chicken noodle soup.
October 7, 2025 at 8:00 pm #47484Navlys - you can freeze the raviolis and then take out how ever many you want to cook. That's what Will and I do with the large bags of Rana when they are on sale.
Tonight I have Stouffer's Swedish meatballs with a shredded carrot salad. I just got home from Chicago and that's all I had in the house.
Len, I really enjoyed your city and had a great time with Will. It's great to see him in his element.
October 7, 2025 at 10:17 pm #47486I'm glad to hear that, CWC!
Yesterday I made a hamburger. Tonight I made stir fry again.
October 8, 2025 at 6:20 pm #47487I had leftover sausage, coleslaw and baked potato.
CWC I'm glad you enjoyed your trip with Will!
October 8, 2025 at 7:28 pm #47490We had chili for supper.
October 8, 2025 at 10:14 pm #47491Tonight, as last night, we had salmon patties on buns with slices of tomato on top. Yesterday, we had more broccoli with dinner, but tonight we had peas. I've been having some digestive upset, so I have not felt much like cooking or baking. I did tackle some tomatoes and made sauce to freeze.
Glad to hear that you had a good trip, CWCdesign.
October 9, 2025 at 5:54 pm #47492Diane had the last of the potato-leek soup and I had a salami sandwich. Tomatoes from the garden are getting scarce and cold weather is in the forecast for later this month, so the season is winding down.
But my tomatoes in the hydroponic system are doing great, they're about 2 feet tall already.
October 9, 2025 at 6:04 pm #47493For dinner on Thursday, I made black-eyed peas with rice, ham, and vegetables. I used ham from the freezer and kale that I bought at the farmers market a week and a half ago. This dinner tells me that it is indeed autumn, and we have been having temperatures in the low forties overnight for the last couple of days.
Today, the crew arrived to start the installation of our solar panels. We are having them put on our shed, because it is the only spot where there is enough direct sunlight throughout the year. Given how electrical prices are increasing, we decided to take advantage of the tax incentive that will cease to exist after December 31.
October 9, 2025 at 7:22 pm #47495For Thursday, I had some thawed chicken tenders in the fridge so on my way home I picked up some asparagus (on sale) and some tiny Yukon gold potatoes. I made a sheet pan dinner. I tossed the asparagus and potatoes in olive oil and roasted them at 425. I tossed the tenders in some of my honey mustard dressing and added them to the pan for another ten minutes. It was all perfect - I just added a little S&P for serving. I have dinner for the next couple of nights.
