      DESCRIPTION
      Crunchy Poppyseed Chicken Casserole. This recipe has been around a long time. It circulated my church many, many years ago and I do not know where it originated. It is so good and can be made the day before and the top added when you get ready to bake. It's also delicious reheated.

      SUMMARY

      INGREDIENTS
      1 whole chicken or chicken thighs with bone in, cooked and deboned + onion for boiling
      1 can cream of mushroom soup
      1 can cream of celery soup
      1 carton sour cream

      TOPPING:
      34 Ritz crackers
      3 TBLS Poppyseed
      1 stick butter

      INSTRUCTIONS
      Boil chicken in lots of water that has been seasoned with a few chicken boullion cubes, a medium-sized onion cut in wedges and other seasonings to taste. Remove from bone.

      Combine soups and sour cream then add chicken. Put in casserole dish.

      TOPPING: Mix together and crumble Ritz crackers and poppyseed. Spread over top of casserole. Melt butter and drizzle over top of cracker mixture. Bake in 350 degree oven 30 minutes until bubbly.
