I have a quick question - made a couple of pie shells today - blind baked them both. One I used to make a sweet potato pie. The other I want to make a fresh peach pie but with just the two of us in the household, there's no way we can eat two pies. Is there a way for me to store the baked pie shell? Can I freeze it if I wrap it well? Wrap and put it in the frig? I saw in the Serious Eats blog that I can wrap well with foil and have it sit at room temp for 3 days. I'm looking for a longer period of time. Thanks for any tips!
My experience has been that a blind baked pie shell will stay good in the freezer for several weeks if well wrapped.
Thanks, Mike, will do that. I guess I may be making the second pie sooner than expected - my sister came by today and took some of the sweet potato pie I had made.
