      Drop Biscuits

      1 ¾ cups flour *
      ½ teaspoon salt
      3 teaspoons baking powder
      ¼-1/3 cup shortening
      1 cup milk

      Preheat oven to 450 degrees.

      In a medium bowl, mix together flour, salt and baking powder. Cut in shortening until mixture looks like coarse crumbs. Make a well in the center and add the milk all at once. Mix well, until a stiff dough forms.

      Drop by heaping tablespoons on a lightly greased baking sheet or cast iron griddle or skillet. Leave space between the biscuits, as they spread as well as rise. Err on the side of small, because they rise quite a bit.

      Bake 10-12 minutes, depending on size and desired doneness. Serve hot.

      *Can use up to ¾ cup whole wheat or barley flour, with no other changes.
      Makes 10-15, depending on size.
