      BakerAunt, I'm so sorry about the death of your mixer! Good luck finding a suitable replacement. I just got a new hand (aka portable) mixer last week. My old GE was about 40 years old and had reached the point I could adjust the speed by wiggling the cord. I'm trying out new mixers, have tried a Cuisinart and a Hamilton Beach so far, and do not care for either one. They are huge (don't fit in the cabinet space allotted to a hand mixer) and heavy, twice as heavy as my old GE. I haven't had a stand mixer for about 40 years, and really don't want one - IF I can find a small, lightweight portable one that does what I need it to do.

        Chocomouse, my Cuisinart hand mixer went kaput about two years ago. I went back to using my older, smaller Kitchen Aid hand mixer. It is not quite as powerful, but it does a good job and is lighter than the Cuisinart. If it goes, then I will pull out the one from Scott's house that he had when we got married, or I can use the old one from his parents' house. They are not as powerful, but they can get the job done. In those days, they made appliances to last! I don't think my stand mixer should have bitten the dust after not quite fifteen years.

        On Saturday, I baked Rye Barley Crispbread, which I have been craving for a while. It mixes up easily by hand, and I always had to knead this heavy dough by hand for 15 minutes. It's topped with sunflower, pumpkin, and sesame seeds, and with the wholegrains, it is a nutritious snack.

        I also baked seven Lemon Ricotta Blueberry muffins to use up a half cup of ricotta left from another recipe. It is good to have frozen blueberries from the summer!

          I did an Apple Slab pie and two loaves of pumpkin cornmeal for Thanksgiving. The Apple Slab was made with a fellow Thanksgiving guest in mind as she likes pie crust much more than the filling. This uses 4 cups of flour as opposed to a round pie that uses three cups.
          The pumpkin cornmeal bread is me going back to my old favorite cornmeal whole wheat recipe. I was visiting friends for the first time in 4 years for Thanksgiving.
          I followed King Arthur Flour recipe for. Apple Slab but didn't frost it. I found it rather boring with only cinnamon as a spice. Next time I'm going to use more and different spices in the pie, or make apple-raisin, or apple-cranberry filling.

            I tried making personal pies in muffin tins. It was a first. The pecan pie is supposed to have a blind baked crust and they shrank a lot. My family said there was too little filling to too much crust. I'm a crust guy so I think they're nuts. I'll need to experiment before next Thanksgiving. Maybe I can bake them without blind baking then pull them out of the muffin tin and finish baking with the shells on a sheet pan.

            I used up the last of my Nabisco chocolate wafer cookies to make the hazelnut chocolate pie. Not sure what I'll do next. There are other chocolate wafer cookies out there so I may try those. I've tried making my own or using Oreos and neither were approved.

              Mini pies or hand pies always seem to have a higher crust-to-filling ratio. But I like pie crust, so it usually isn't an issue for me either. I'm thinking about doing some 4" turkey pot pies with leftovers vs a 9 or 10 inch pot pie.
