For dinner on Sunday, I roasted two bone-in chicken breasts and made a farro-vegetable stir-fry with carrots, celery, green onion, yellow bell pepper, mushrooms, and spinach. I had meant to grab the kale and did not realize until I had washed it that I had the bag of spinach from the farmers market instead. Any green works in stir-fry, and we are enjoying the ones coming to the market.

May 26, 2025 at 8:12 pm #46411Since I'm off tomorrow, I made a nice dinner tonight and per usual, good for a few more nights. It's called Chicken Piccata Meatballs from Southern Living. I baked the meatballs instead of frying them. The sauce was light and had a nice flavor. The meatballs were very tender - I find sometimes chicken meatballs can be very dry. It was nice to make myself a new weeknight recipe that I enjoyed for a change. The last few were disappointing.
May 26, 2025 at 9:07 pm #46412We do not usually do anything special for Memorial Day, but I made our favorite potato salad today. I made a change in that instead of boiling the potatoes, I steamed them. I think that it improved taste and texture, and I will make that change permanent.
I bought a pound of hamburger at the farmers market on Saturday, and my elder bonus son grilled hamburgers for us. (My husband has many skills, but grilling is not one of them.) I had four buns in the freezer (Len's recipe), so I pulled them out. Our charcoal "grill" is a very old, low to the ground one that belonged to Scott's parents. I think that we last used it two years ago.
May 27, 2025 at 5:36 pm #46417Today I'm eating leftovers from the weekend and Memorial day .I haven't been keeping up with everything from being so busy with my house guests and going back and forth everyday to my friends and families place which is about 30 minutes from me but we were there everyday from around lunch till after 11 pm every night, lots of fun but tiring. I hope you each had a good weekend.Thankful for the ones who gave their lives so we can live in a free country.

May 27, 2025 at 9:32 pm #46422On Sunday I made pork tenderloin on the BBQ. Yesterday I decided to make pizza dough as the temps are still on the cool side. So yesterday and today I had bbq pork tenderloin pizza with a side of fresh green beans and carrots. I have enough dough for one more pizza, tomorrow.

May 28, 2025 at 7:29 pm #46429I made a pork stir-fry with soba noodles for dinner on Wednesday, using the leftover pork from earlier this week and the deglazing from it, along with carrots, celery, three colors of mini-bell peppers, green onion, and the rest of the Bok Choy that I bought at the farmers market. Other than the cutting and slicing, the meal comes together quickly.
