INSTRUCTIONS
Preferments
Poolish - 505 gr flour à Stir till smooth
4 cups water
¼ tsp. yeast
Biga - 450 gr flour à knead till smooth
1 tsp. yeast
1-1/4 cups water
Pate Fermentee (Old dough) - 456 gr flour à knead till smooth,
1-1/2 tsp. salt let rise 90 minutes,
1 tsp. yeast knead a couple
1-1/4 cups water seconds, refrigerate
