      DESCRIPTION
      Sugar cookies

      SUMMARY

      INSTRUCTIONS
      This recipe from the Cooks Illustrated cookbook, The Best Recipe, page 428-429. I usually double this because I like large cookies.

      2 cups flour
      1 tsp baking powder
      1/2 tsp salt
      2 sticks or 1 cup unsalted butter, room temperature
      1 cup sugar, plus extra for rolling
      1 large egg
      2 tsp vanilla

      Preheat oven to 375. Whisk dry ingredients together and set aside. Cream butter and sugar on medium speed until light and fluffy, 3-5 minutes. Scrape the sides of the bowl with a rubber spatula and add egg and vanilla. Beat until combined, about 30 seconds. Add dry ingredients and beat at low speed until just combined, about 30 seconds.

      Place extra sugar in wide bowl. Roll dough into balls and then place in sugar and roll around. Place on ungreased cookie sheets. Spray the bottom of a small glass with Pam and dip in the extra sugar then flatten the balls. You will need to spray and redip the glass in the sugar every couple of cookies. Bake for 10-12 minutes until the edges of the cookies are golden brown. Cool 4 minutes and then move to wire rack to continue cooling.

      Notes:

      1. How long you bake the cookies will be determined by how much you flatten the cookies.
      2. These take closer to 14 minutes in my oven when I use my medium cookie scoop.
