Zucchini Apple Bread
4 cups flour
1 Tbsp. baking soda
1 1/2 tsp. ground cinnamon
1/4 tsp. baking powder
1/2 tsp. nutmeg
5 eggs
1 1/2 cups vegetable oil
2 cups sugar
1 cup firmly packed brown sugar
1 Tbsp. vanilla extract
2 cups shredded zucchini
1 cup shredded apple
1 1/2 cups chopped pecans
Combine first 5 ingredients, set aside. Combine eggs, sugar, brown sugar, oil, vanilla in large bowl.
Beat at med. speed until well blended. Stir in zucchini, apple, pecans. Add dry ingredients, stir until just moistened. Use 3 greased/floured loaf pans. Bake at 350 degrees for 50-55 min.
