Sweet Potato Casserole:
3 cups boiled, mashed sweet potatoes
1/3 cup milk
1/2 cup sugar
3 Tbsp. butter, softened
2 tsp. vanilla extract
2 eggs
salt
Topping:
1 cup chopped pecans
1/2 cup brown sugar
1/3 cup flour
1 cup coconut
4 Tbsp. melted butter
Mix together casserole ingredients. Pour into lightly greased 9 x 13 inch pan. Mix together topping ingredients; sprinkle over top. Bake at 350 degrees for 30 min.
