Oatmeal Date Muffins
The original recipe appeared years ago in the weekly food section of the Los Angeles Times. I reduced the baking powder from 3tsps. to 2 tsps., and substitute 1/4 cup butter for the 1/4 cup of shortening. I prefer light brown sugar to dark brown. I've also made it with half white whole wheat flour. The recipe makes 12 regular or 6 jumbo muffins.
1 cup flour
2 tsp. baking powder
1/2 tsp. salt
1/4 cup unsalted butter
1 cup old-fashioned oats
1 egg
1 cup milk
1/3 cup light brown sugar
1/2 cup chopped dates
Preheat oven to 400F. Grease 12 muffin cups or 6 jumbo muffin cups.
In medium bowl, whisk together flour, baking powder, and salt. Cut in butter until crumbly. Stir in one cup of old-fashioned oats. In small bowl, whisk egg, then whisk in brown sugar, then milk. Add liquid mixture to flour mixture. Fold in dates.
Spoon into greased muffin cups. bake 18-20 minutes. Remove immediately from pan and cool on rack. These muffins are good warm or cold.
Made these Sunday morn. they were very good. My 6 year old granddaughter thought I said I put chopped bait in them, but she liked them.
