Next week we go to my husband's cousins' reunion. I've been asked to do a vegan sloppy jo (one cousin is a vegan), which means that I also need to do vegan buns to put them on. All my bun recipes use buttermilk and eggs. I looked at the King Arthur site and found this one:

I would omit the dried onion and herbs, as there is no point with the filling. I have potato flour, and that will at least add some calcium. I plan to make them half whole wheat and add 2 Tbs. flax meal, so I will increase the water slightly. I might also increase the olive oil to 3 Tbs. to make them softer. I would make 8 buns per recipe.
Has anyone tried this recipe? I don't really have time to do a test run before baking them on Sunday, and I will need to make two batches.
I will probably make a smaller amount of vegan sloppy jo and a larger amount of beef for the rest of us. However, I don't want to bake two different kinds of buns.
You should be able to find several recipes for buns that use shortening or plant butter, which are vegan.
