Rhubarb Cake
1 1/2 cups rhubarb, cut fine
1/2 cup sugar
Combine these two and set aside.
2 cups flour
1 1/2 cups sugar
1/2 cup oil
1 egg
1 cup sour milk
1 tsp. soda
1 tsp. cinnamon
1 tsp. vanilla
Mix together and add rhubarb/sugar mixture. Stir until well blended. Pour into greased & floured 9 x 13" pan. Bake at 350F degrees for 1 hour.
Topping: Mix well:
6 Tbsp. softened butter
1 cup coconut
2/3 cup brown sugar
1/4 cup milk
1 cup nuts, finely chopped
Pour over cake while cake is still warm.
