      Maringoon Cookies

      This is another very old recipe and my sister's favorite Christmas cookie.

      3 egg whites
      1/4 t. salt
      1/2 t. vanilla
      1 cup powdered sugar
      6 oz. chocolate chips
      1 cup coconut
      2 cups corn flakes

      Combine egg whites, salt and vanilla beat until stiff but not dry. Beat in powdered sugar gradually till stiff and satiny.

      Fold in remaining ingredients.

      Drop by tsp. onto well greased pan. Do not even think about using parchment paper here. The cookies will stick. (believe me, I know)

      Bake 350 degrees for 8-10 minutes. Watch closely, Do not over bake, should be barely tan.

      I use my hand mixer for these cookies, just works better for me.
