      Scandinavian Almond Cake

      This cake is made with a special pan. The pan is a half round and about 12 inches long. It has indents every half inch making it look like individual slices when the cake is out of the pan. I've never tried to make this in any other pan so I don't know how it will come out.

      1 1/4 cup sugar
      1 egg
      1 1/2 tsp pure almond extract
      2/3 cup milk
      1 1/4 cup flour
      1/2 tsp baking powder
      1 stick melted margarine

      Beat sugar, egg, almond extract and milk in a bowl. Add flour and baking powder and mix well. Then add margarine and mix well.

      Spray pan with cooking spray. Bake at 350° for 40-50 minutes. Edges must be golden brown.

      Cool in pan before removing. Cake will break if removed too soon.

      Sprinkle top with confectionary sugar.

      If you'd like you can sprinkle sliced almonds in the pan before pouring in the batter.
